Meatless Red Lentil Chili

There are two things I love about this recipe.

  1. I can find all the ingredients on the same isle at Trader Joe’s
  2. It comes together perfectly on slow in the Instant Pot

I usually have these ingredients on hand so it makes for a perfect dump meal on a weekend afternoon or like I am doing today for #MealPrepMonday

The unique spice blend I use is what sets this recipe apart and it could easily be altered for any meat lovers out there.

INGREDIENTS

***ALL IN THE SAME ISLE

1 can Trader Joe’s black beans, rinsed

1 can Trader Joe’s red kidney beans, rinsed

1 bag of Trader Joe’s red lentils, rinsed

1 28 ounce can of Trader Joe’s diced tomatoes (you could sub with pure pumpkin)

1 6 ounce can of Trader Joe’s tomato paste

1 box of Trader Joe’s Vegetable Broth

FROZEN FOOD SECTION

1 bag of the Trader Joe’s Melange A Trois Pepper (colored pepper strips, this is a game changer)

3 Garlic Cubes

PRODUCE

2 seeded and diced jalapeno (reserve 1 for topping)

1 medium size onion, diced

SIGNATURE SPICE BLEND

1/4 tbsp ground cloves

1/2 tbsp ground coriander

1/2 tbsp ground cardamom

1/2 tbsp ground cinnamon

2 tbsp chili powder

1 tbsp turmeric1 tbsp cumin

1/2 tbsp black pepper

1 tsp salt

DIRECTIONS

Saute’ diced onion, garlic,  and jalapeno in your instant pot. Add the bag of peppers. Once all is defrosted and combined, add in the remaining ingredients. Change setting to slow cook for 4 hours.

15 minute prep time and then you can set it and forget it until dinner. Serve with bread, salad, or both 🙂 We like to top with more jalapeno and avocado! Maybe even a little almond cheese too. Enjoy!
