Peanut Butter Chocolate Date Bites

I love keeping easy bite size treats in the fridge. The problem is, they go so fast. Especially after Jason finds my stash. But I made this batch specially for him last Friday as a weekend treat. With a few simple ingredients, they were delicious and were a yummy mid meal snack.

INGREDIENTS: 

1/2 Cup Peanut butter

1 Cup Dates (pits removed)

1/2 Cup Chopped Mixed Nuts

1 Tsp Vanilla

1 Pinch Salt

1 Tsp Cinnamon

1/4 Cup Oats (may want more for texture)

2 Tbsp Chocolate Chips

3 Tbsp Melted Coconut oil

DIRECTIONS: Set nuts to the side. Combine all other ingredients in the food processor. Set mixture in the fridge for 10 minutes to chill. Lay out parchment paper on a flat serving tray. Pour bits in a shallow dish for coating. Take mixture out and form bite size balls using a spoon and hand. Roll in nut mixture and place on parchment paper. After all are made, chill once more in fridge. Store in tuber-ware in fridge.

Ideal for pre or post workout!!! Goes great with coffee.
