Non Dairy Creamy Acorn Squash Soup

Enjoy this “creamy” soup as a delicious fall flavored lunch or alongside dinner

Non Dairy Creamy Acorn Squash Soup

Ingredients

1 Acorn Squash

1/2 cup water or low sodium vegetable broth

Sea Salt & Pepper to Taste

1/4 tsp Nutmeg

1 Chopped Garlic Clove

1/4 tbsp of Coconut Sugar

2 tsp of Olive Oil

Directions

Cut Acorn Squash in 1/2

Season with the spices above, apply equal parts of the seasonings to each half

Roast uncovered squash in the oven for 20-35 minutes at 425 degrees, should be easy to pierce with a fork when done

Scoop out the inside of the squash and place into your mixing container while squash is still warm

Add the water or low sodium vegetable broth

Blend in your Vitamix or other mixer until the soup reaches the consistency you prefer, Soup will take on a creamy texture

Serve alone or try adding sliced avocado, cheese, or greek yogurt as a topping
