Comfort Food Can Be Good For You: “Spaghetti with Pink Sauce”

This past week was freezing!!! I was in search of warm, cozy, comfort food every night for dinner. As soon as I come in the door from a run in the evening, I want to fuel up and fill up with something warm and cozy. Sometimes it is challenging to find comfort food that is actually good for you and doesn’t pack on the calories and FAT!!!

All the running lately has me craving pasta and lots of it!!! Between the noodles and the heavy sauces, it does not seem worth it on a regular basis. Last week I made a creamy pasta sauce that will be in rotation just like my Petite Pesto Sauce.

Spaghetti with Pink Sauce

Spaghetti Squash

INGREDIENTS:

1 spaghetti squash, baked, cooled, and scooped out.

1 can of fire roasted tomatoes, unsalted

1 tbsp on crushed garlic

1 tbsp of basil

1 tbsp

salt & pepper to taste

1/2 cup of non-fat, unflavored greek style yogurt (SECRET INGREDIENT)

Greek yogurtHeat medium saucer with a teaspoon of olive oil and crushed garlic on medium heat. Add in the can of tomatoes, salt & pepper, and basil. Simmer for 15 minutes on low heat. Add in the greek yogurt and stir continuously until the sauce becomes pink in color. Heat sauce through. (Add in more garlic, basil, salt & pepper based on your own personal taste)

Serve sauce over the already prepared spaghetti squash.
