How To: Coconut Pecan Pancakes and Pajama Day

Ever have those days where all you want to do is stay in your pajama’s and watch movies? Well I do! This is a tradition my mom started with us as kids and one I am happy to continue! She knew we needed extra rest from time to time and when those opportunities present themselves now, I take full advantage. Sunday was one of those days. I woke up before the sun and decided to stay curled up in bed just a little longer. Before I knew it, Weekend TODAY was starting and I had not even had any coffee yet. I shuffled to the kitchen, filled my french press and scurried back to a fort of blankets…mug in hand.

Within the hour, my desire to do anything that required pants or make up went out the window. There is something magical that happens when you know you have hours to dwell within your own space and no pressing to-do list looming over you.

There are tricks to mastering your own pajama day. Check out these tips to help you fully enjoy your own day of rest.

1. First, make sure you have a fully loaded Netflix playlist. My chick flick marathon began with Love Actually and The Holiday. #BritishRomance

2. Second, tackle those annoyingly awesome organizational tips you recently saved to your pinterest board. You now have time to decorate your mantle for the upcoming holiday season. You also can re-stock your closet and your makeup for the fall. It will be like shopping and will leave you that much more prepared for the week. Using cute containers like these lets you display your necessities in a pretty, yet purposeful way!

3. Graze your way through the day with small snacks. You have all the time in the world and now you can enjoy those recipes you have been wanting to make as part of your weekly meal prep, even breakfast for dinner. I am loving this protein packed pancake recipe anytime!

COCONUT PECAN PANCAKES
Batter Mixture
2 eggs
1/2 Banana
Dash of Cinnamon
Dash of Vanilla Extract
Pinch of Salt
Blend in your ninja. Spray pan with coconut oil. Spoon batter into 5 individual cakes. Drop a little bit of coconut and pecans in the center of each. Let cook 1 minute on each side.
TOPPINGS
Dry Roasted Pecans
Unsweetened Toasted Coconut
Maple Agave Syrup from Trader Joe’s
